Pumpkin Patch Party Mix


You Will Need
4 cups air-popped popcorn
Toasted fresh pumpkin seeds or 3 cups shelled sunflower nuts
2 cups honey graham cereal, round sweetened bran cereal or round toasted oat cereal
1 1/2 cups lightly salted dry-roasted mixed nuts or peanuts
1 1/2 cups candy corn or gumdrops
1 1/2 cups raisins

What to Do
1. In a large bowl, stir together the popped popcorn, pumpkin seeds, honey graham cereal, mixed nuts, candy corn and raisins.

2. To store, place in a tightly covered container.

Makes about 12 cups.

How to Toast Fresh Pumpkin Seeds

From Like Grandma Used to Make
1. Remove the seeds from a pumpkin, leaving behind as much of the fiber as you can. Immediately place the seeds in a large bowl of water to avoid any fiber drying on the seeds.

2. Transfer the pumpkin seeds to a colander. Thoroughly rinse the pumpkin seeds under cold running water, rubbing the seeds between your fingers until the pulp and strings are washed off. Drain well.

3. Preheat the oven to 300°F. In a medium-size mixing bowl, combine 3 cups of the pumpkin seeds, 2 tablespoons vegetable oil and 1 teaspoon salt; stir to coat well. Spread the seeds onto a baking sheet. Bake for 65 to 70 minutes or until lightly browned and crisp, stirring often to brown the seeds evenly. Cool to room temperature. To store, place in a tightly covered container (will keep for 1 week).

Makes 3 cups.

Talking Cheese Stuffed Turkey Burgers

CHEESE STUFFED TURKEY BURGERS

Prep: 15 Min. Start to Finish: 30 Min. Makes 12 Burgers

3 pounds ground turkey breast
1 to 2 jalapeno chilli, seeded and chopped.
1 cup diced Monterey Jack Cheese with japeno peppers
3/4 teaspoons pepper
1 1/2 cups Old Elpaso Thick 'n Chunky Salsa
12 hambugerbuns,split and toasted.
12 slices tomato, additional Old Elpaso Thick n Chunky Salsa, if desired.

1. Heat coals or gas grill.Mix turkey, chilies,cheese,pepper and 1 1/2 cups
salsa. Shape mixture into 12 patties about 3/4 thick.

2. Cover and grill patties 4 to 6 inches from medium heat 12 to 15 min,
turning once,until no longer pink in the center.

3. Serve on buns with tomato slices and additional salsa.

Talking Salmon Patties

SALMON PATTIES



Prep:15 Min Start to Finish: 27 Min. Makes 4 sandwiches

1 cup soft bread crumbs(about 1 1/2 slices bread)
Lettuce leaves
4 tablespoon pepper
8 medium green onions finely chopped (1/2 cup)
2 eggs slightly beaten
1 can ( 14 3/4 ounces) red salmon skin and bone removed,drained & flaked.
2 tablespoons butter or margarine
4 whole wheat hamburger buns,slpit.

1.Mix all ingredients except butter,buns,lettuce and dill dip in medium bowl.
Shape mixture into 4 patties,using heaping 1/2 cupfuls for each patty.

2. Melt butter in 10 inch nonstick skillet over medium heat.Cook patties
in butter over medium heat 10 to 12 minutes,turning once,until brown
and cooked through.
3. Fill with lettuce,salmon patties and dill dip.

Smile Chocolate cake ......YUMMMYYY!!!

Molten Mocha Cakes
Prep Time: 15 min
Total Time: 32 min
Makes: 8 servings
1 pkg. (8 squares) BAKER'S Semi-Sweet Baking Chocolate
1 cup (2 sticks) butter
2 cups powdered sugar
1/2 cup COFFEE, any flavor
5 whole eggs
4 egg yolks
3/4 cup flour

PREHEAT oven to 425°F. Grease 8 (6-oz.) custard cups or souffle dishes. Place on baking sheet.
MICROWAVE chocolate and butter in large microwavable bowl on HIGH 2 minutes or until butter is melted. Stir with wire whisk until chocolate is completely melted. Add powdered sugar and flavored instant coffee; mix well. Add whole eggs and egg yolks; stir until well blended. Stir in flour. Pour batter evenly into prepared custard cups.
BAKE 15 to 16 minutes or until cakes are firm around edges but soft in the centers. Let stand 1 minute. Run small knife around cakes to loosen. Carefully invert cakes onto dessert dishes. Garnish with a light sprinkling of additional powdered sugar and fresh raspberries, if desired. Serve immediately.


TIPS

Size It Up
Very chocolatey, with a warm fudgy center, these cakes are perfect for a special occasion.

Luscious Four-Layer Pumpkin Cake
Prep Time: 20 min
Total Time: 42 min
Makes: 16 servings



1 pkg. (2-layer size) yellow cake mix
1 can (15 oz.) pumpkin, divided
1/2 cup milk
1/3 cup vegetable oil
4 large eggs
1-1/2 tsp. pumpkin pie spice, divided
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1 cup powdered sugar
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed
1/4 cup caramel topping
1/4 cup chopped PLANTERS Pecans

PREHEAT oven to 350°F. Grease and flour 2 (9-inch) round cake pans. Beat cake mix, 1 cup of the pumpkin, the milk, oil, eggs and 1 tsp. of the pumpkin pie spice in large bowl with electric mixer on medium speed until well blended. Pour evenly into prepared pans.
BAKE 20 to 22 minutes or until toothpick inserted in centers comes out clean. Cool completely on wire racks. Meanwhile, beat cream cheese in small bowl with electric mixer on medium speed until creamy. Add powdered sugar, remaining pumpkin and remaining 1/2 tsp. pumpkin pie spice; mix well. Stir in whipped topping.
REMOVE cake layers from pans; cut each layer horizontally in half with a serrated knife. Stack the layers on a serving plate, spreading the cream cheese mixture between the layers. Do not frost the top layer. Drizzle with caramel sauce and pecans. Store in refrigerator.

How To Slice and Stack Cake Layers
Place 1 of the cooled cake layers on a serving plate. Make a 2-inch horizontal cut around side of cake using a long serrated knife. Then, cut all of the way through the cake layer to make 2 layers. Remove the top layer by sliding it onto a 9-inch round cardboard circle. Frost the cake layer on the serving plate with 1/3 of the whipped topping mixture, then slide the top half of the split cake layer from the cardboard circle onto the frosted layer on plate. Place the remaining unsplit cake layer on a cutting board. Cut into 2 layers as done for the first layer. Repeat the process of transferring the cake layers to the stacked cake layers on plate using the cardboard circle.

Talking Fresh Baked Fish In Lettuce Pockets

FRESH BAKED FISH IN LETTUCE POCKETS



6 Large lettuce leavens or 12 small lettuce leaves
1 medium carrot, shredded
1 small zucchini,shreded
1 1/2 fresh or frozen (thawed) fish fillets cut into 6 serving pieces
1 teaspoon dried marjoram leaves salt & pepper to taste
2 tablspoons butter or margarine


1. Heat oven to 400 F. Place a few lettuce laves at a time in hot water.

2. Mound a portion of the carrot and zucchini near stem end of each
lettuce loaf. Place 1 piece fish on vegtables. Sprinkle w/
marjoram, salt and pepper; dot w/butter.

3. Fold lettuce leaf over fish;place seam side down in ungreased
rectagular baking dish, 13X9X2 inches ( vegtables should be on
on top of fish). Cover and bake 25 to 30 min or until fish flakes easily
with fork.
